For over 10 years I have worked in the food service industry, even as I run this company I work full-time as a chef for a catering company here in Orange County. I know our knives are our babies and we don't trust others touching our knives.
​That's how I got started sharpening my own knives, I let someone else sharpen my Shun for me and they sand-blasted it to death.

I sharpen knives on a Tormek T8 system, which is a guided spinning wheel version of a whetstone. The Tormek allows us to take off as little material as possible from your knife, only removing from the cutting edge of the blade.​ To make sure of this I sharpen all knives to their factory specified angle. Each brand of knife makers has their own angle they set their knives to, along with different angles for different blade types. I adhere to this to make sure the knife integrity stays whole.

We offer every other week sharpenings. This is a popular option for prep heavy kitchens. We will come to your work or home and sharpen your knives on-site from our truck.

In addition to our regular sharpenings we are able to provide house knife sets for a non-refundable $8.00 per knife. We will come a drop-off a fresh set of knives at your business at your desired period and you will always have a set on hand until the end of our sharpening agreement.
